Tempe is a fermented soy product free of lectins (protein found in unfermented soy products) that can be harmful to our gut. Tempe is the product of long fementation that produces Probiotics and enzymes. It is a rich vegan protein source which makes it a prefect vegan recipe. It has a nutty texture that resembles meat and the kind of satiety sensation that follows immidiately after eating the tempe Schnitzel. It is made of fermented Soy protein so it is on my YES list . The fermentation which is a process in which carbohydrates are broken down by bacteria and yeast. The soybeans are then pressed and bound together to form a dense patty.
The fermentation process of the Soy beans neutralizes lectins and toxins that can be harmful to our health. Unfortunatley most soybeans are GMO product being bombasted with roundups and carcinogens chemicals. This is why they are on my NO list.
